2. Chicken and Veggie Stir Fry: Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of olive oil and 1 pound of diced chicken. Cook until lightly browned and cooked through, stirring occasionally. Add 1 large red pepper, 1 large green pepper, 1 onion and 1 cup of sliced mushrooms. Cook until vegetables are tender, stirring occasionally. Add 1/4 cup of soy sauce and 1/4 cup of honey. Stir to coat the vegetables. Serve over cooked rice.
3. Chicken and Rice Casserole: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish. Cook 1 cup of long-grain white rice according to package instructions. Meanwhile, in a large skillet over medium heat, cook 1 pound of ground chicken (or diced chicken breast) until browned and cooked through, about 8 minutes. Add 1 diced onion, 2 cloves of minced garlic, and 1 teaspoon of Italian seasoning. Cook for an additional 2 minutes.
To the skillet, add 1 (14.5-ounce) can of diced tomatoes, 1 (10.5-ounce) can of cream of chicken soup, 1 cup of frozen mixed vegetables, and 1/2 cup of shredded cheese. Then you stir to combine. Add cooked rice to the skillet and stir to combine. Pour the mixture into the prepared baking dish and top with additional shredded cheese. Bake for 30 minutes or until the cheese is melted and bubbly. Let cool for 10 minutes before serving. Enjoy!
